Orange Zucchini Cake with Orange Cream Cheese Icing
I adapted this recipe shared by Sarah Bresher Wallen ever so slightly.
Cake: 1 cup flour 1 teaspoon baking powder 1 teaspoon baking soda 1/4 teaspoon salt 1 teaspoon vanilla 1 teaspoon cinnamon 1 1/2 teaspoon grated orange peel 1 cup grated zucchini 1/2 teaspoon nutmeg 1/2 cup chopped walnuts 3/4 cup sugar 1/2 cup vegetable oil 2 eggs 1/2 cup raisins Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside. In large bowl beat sugar, eggs, and oil until well mixed. Stir in orange peel and vanilla. Add flour mixture, zucchini, nuts, and raisins. Mix well. Pour into a greased 8x8 pan. Bake at 325 degrees for 35 minutes or until toothpick comes out clean. Icing 8oz softened cream cheese 2 teaspoon softened butter 1 teaspoon grated orange peel 2 cups powdered sugar 1/2 tsp orange extract Mix first 4 ingredients well. Add milk if need to thin. Spread on cooled cake. |
