I should have had one ages ago, but alas the majority of my chopping and cutting has been with my trusty chef knives. Now I've stepped it up with a mandoline. I can slice, dice and chop just the old info commercials used to brag about!
I couldn't wait to test it out so I used some of the produce I bought at our local farmer's market today to make on my favorite summer side dishes -- Parmesan Zucchini.
Ingredients
1 medium zucchini, sliced thin 1 small onion, sliced thin 2 tbsp butter Parmesan cheese pepper
Instructions
Melt butter in skillet.
Add sliced onions and zucchini and cook until translucent.
Sprinkle with pepper and then Parmesan cheese. Allow it to continue cooking a couple of more minutes, tossing gently to combine the ingredients.
Remove from skillet to a serving platter. Sprinkle with more cheese for presentation.
