Ingredients
2 cups cake flour 1/2 tsp salt 2 tsp baking powder 2 eggs 1 1/3 cup sugar 1/2 cup light cooking oil 1/2 cup buttermilk 2 tbsp fresh lemon juice zest of 1 lemon 1 cup shredded zucchini
Glaze
1 cup confectioner's sugar 2 tbsp lemon juice 1 tbsp milk
Combine dry ingredients (flour, salt and baking powder) in a bowl and set aside.
In a mixer, combine eggs, sugar and oil. Add in lemon juice, zest and buttermilk and mix well. Fold in zucchini.
Add in dry ingredients. Pour batter into a prepared 9x5 loaf pan and bake at 350 for 45 minutes, and until center is set.
