There are many different recipes for these delectable orbs of goodness out there, but this this the one that works the best for me.
Ingredients
1 cup of peanut butter 1/4 cup margarine, softened 1 cup confectioner's sugar 2 cups Rice Krispies cereal 1 1/2 cups chocolate chips * 2 tbsp vegetable oil (or more) *
* in place of the chocolate chips and oil, you could use melting chocolate or regular chocolate baking squares and butter.
Instructions
Cream together peanut butter and margarine until well blended. Add in confectioner's sugar, and then after that is combined add in the cereal. Combine until everything is very well blended (this will take some muscle power)
Roll the mixture into 1 inch balls and place them on a cookie sheet lined with wax paper. Place them in the freezer to chill. This will make coating them in chocolate easier.
In a double boiler, melt the chocolate chips and add oil one tablespoon at a time until the melted chocolate is a smooth dipping consistency.
Lower the peanut butter/cereal balls in the chocolate one at a time with a fork or spoon and coat well, before removing and placing them back on the wax paper.
Chill in the freezer once again on the cookie sheet, and then place them in storage containers.
