Note;this recipe is for 9-10 inch cast iron skillet, I used a smaller one and halved the amounts. It turned out great!
Ingredients
4 apples, peeled and sliced (tart works best but I used what I had on hand), 1 3/4 sticks of butter/margarine 3/4 c sugar (I suggest brown sugar for a richer color and taste)
1/2 cup butter (1 stick) 2/3 cup sugar 1 1/2 tsp vanilla 2 eggs 1/2 cup sour cream 1 1/2 cup flour 1 1/2 tsp baking powder 1 tsp salt 1/2 tsp cinnamon 1 apple, peeled and chopped fine
Instructions
Preheat oven to 375 F.
In skillet, melt 1 3/4 cups of butter/margarine while on low. Add 3/4 cup of sugar, stir well until sugar is dissolved. Add apples to pan and leave it to cook on medium low while you prepare the batter.
In a large bowl, cream together butter and sugar. Add in vanilla and eggs. Mix well. Add in sour cream. Mix well.
In a small bowl combine dry ingredients. Add in increments to the wet ingredients until combined. Don't over mix. Fold in chopped apple.
Take the skillet off the burner, and carefully spoon the batter on top of the butter/apple mixture as best you can.
Put skillet in 375F oven and bake for 25 minutes. Allow to cool slightly and invert on to a plate.
