I am completely addicted to it. I've made three batches of this recipe in the last week. It's a great side, full of freshness and flavor. It keeps well too, although I don't seem to have a problem with having too many leftovers. Do yourself a favor and give this one a try! So easy to put together too!
Corn with Feta and Walnuts
1 c. walnuts, chopped 4 c. fresh corn kernels (I would love to try roasted corn for this in the summer, but I used frozen kernels, thawed out and it worked great) 2 jalapenos, seeded and finely diced 2 tbsp fresh lime juice 2 tbsp olive oil 1/2 c. feta crumbles (*you can use another cheese if you prefer)
Instructions
Heat your oven to 400F and toast your walnuts until fragrant, (usually 6 minutes or so) let them cool and roughly chop.
Combine all ingredients, except cheese, in a large bowl. Chill until ready to eat; sprinkle with cheese before serving.
