Ingredients
1 (15 oz) can of peaches, drained, and chopped into small pieces 2 cups of flour 3 tsp baking powder 1 cup sour cream 1 cup butter, softened 1/4 cup sugar 1 tsp vanilla
Streusel
1/4 cup pecans, finely chopped 1/3 cup brown sugar 1/2 tsp cinnamon
Instructions
Mix flour, baking powder, sugar, sour cream and melted butter together. Add vanilla. Add in chopped peaches.
Spoon a small amount of the batter into the bottom of a 12 cup prepared muffin pan.
Sprinkle a small amount of streusel mix in each cup and then top with remaining batter. Sprinkle remain streusel mix on top of each muffin if desired.
Bake at 350F for 35 minutes. Let rest before inverting pan to remove them.
