We served this tonight as a side for our ham along with the great Sweet Potato Casserole we had left over from yesterday that also came from Debbie. Debbie and her family call it Pineapple Fluff, but it resembles a warm, tangy sweet bread pudding and went great with our ham. It was a great change up from our regular sides and would be welcome on any holiday dinner table I'm certain!
Pineapple Fluff
1/2 cup butter (soft) 15 oz. can crushed pineapple (drained) 3 beaten eggs 3/4 cup sugar 5 slices of cubed white bread---no crusts
Cream the butter and the sugar--add the eggs and beat well using mixer.
Add the rest of the ingredients.
Put all into 1/2 qt. ungreased casserole dish. Bake for 40-45 minutes at 325 (uncovered).
Debbie says: This recipe can be doubled and put into a larger casserole dish.
