Note I used a premixed bag from Trader Joe's that included Kale, Brussel Sprouts, Broccoli, Green and Red Cabbage, instead of the regular slaw mix the recipe called for.
Ingredients
1 bag (approx 10 oz) of shredded cabbage 2 fresh peaches 1/3 cup red onions, chopped 2 tbsp cider vinegar 1 tsp sugar 1 cup raisins 2 tbsp mayonnaise
Directions
In a small bowl, combine the sugar and vinegar. Add the chopped red onions, and let sit for a few minutes to "pickle" the onions.
In a large bowl combine the slaw mixture, raisins and the red onions. (Reserve the pickling juice).
Add mayonnaise to the pickling juice and toss with the slaw/raisins/onions.
Place in the fridge for a couple of hours to allow the dressing to seep into the other ingredients.
Just before serving, add in the chopped peaches and toss.
