I'm not really certain that this is Belgian, and there really isn't a pudding layer, but this is the title that was shared with me. The cake and apple part of the name, however, is spot on. Its not overly sweet, which makes it a great dessert for me, and it is surprisingly easy while making it look like you spent much more time than an hour out of your day making it. A great dessert to bring to a get-together.
Ingredients
Cake
1 cup flour 1 tsp baking powder 1 tsp cinnamon pinch salt 2 large eggs ¼ cup oil ½ cup sugar 6 tbsp whole milk 1 tsp vanilla extract 3 Granny Smith apples, peeled and sliced
Glaze
1 large egg ½ stick butter, melted and cooled 5 tablespoons sugar
Instructions
Preheat your oven to 350F.
Prepare a 9" spring-form pan.
In a medium bowl, sift together flour, baking powder, cinnamon, and salt.
In a large bowl, whisk together the eggs, oil, milk, sugar, and vanilla until blended.
Add flour mixture to the batter and mix well.
Pour the batter into the spring form pan. Arrange the apple slices on top in a circular design.
Bake for 20 minutes.
Mix up the glaze, and when the first 20 minutes of baking time is up, remove the cake, pour the glaze over the top, and then return to the oven for another 20 minutes.
Allow to cool, and run a knife around the edges, before releasing the sides of the pan.
