1 1/4 cup flour 1 cup oats 1 1/4 cup brown sugar 1/2 cup butter 1 tsp cinnamon
4 cups chopped rhubarb
1 cup sugar 1 cup cold water 2 tbsp corn starch 1 tsp vanilla
Mix together crumb ingredients until it resembles a coarse meal.
Press 1/2 of the mixture into the bottom of a prepared 9x9 deep baking dish.
Spread the chopped rhubarb over top of the crumb layer.
Spread the remaining crumb mixture on top.
Use part of the 1 cup of cold water, ( a couple of tbsps) to make a slurry with the cornstarch.
In a saucepan, mix the remaining water, the slurry, and sugar. Bring to a boil and stir until it thickens and becomes clear. Remove from heat, and add in vanilla. Pour the sugar syrup over top of the crumb topping.
