How to Roast Chestnuts
If you're lucky enough to find fresh chestnuts this season, you don't need an open fire to cook them. They're a seasonal treat that brings the warmth of Christmas' Past to your home.
1. With a knife, score an X into the skin of the chestnut. This will make them easier to peel after they've been roasted.
2. Heat your oven to 425 F.
3. Place scored chestnuts on a cookie sheet.
4. Roast for about 30-35 minutes, moving the chestnuts around occasionally to prevent scorching.
5. Optional - some people spray their chestnuts with red wine for added flavor.
Traditionally, roasted chestnuts are placed while stir warm, in the center of the table, while everyone gathers around to peel and enjoy them, together as a family.
Alternatively - you can boil the chestnuts, in salted water, with a bay leaf for 30 minutes and then cut them in half, to scoop out the meat and mash to use in recipes.
