Sheila Babneau WE LOVE our fried green tomatoes! I use flour, salt, pepper and a bit of Panko crumbs for extra crunch. Dredge them in a milk/water mix then into flour mixture. Cook in oil turning them once each side.

Green Tomato Pie
6-8 medium green tomatoes 2 tblsp. lemon juice 1 tsp. lemon zest 1/2 tsp. salt 1/4 tsp. pepper 3/4 granulated sugar 2 tblsp. cornstarch 1 tblsp. butter
Wash the tomatoes well, peel and slice. Combine tomatoes with lemon juce, zest, salt and cinnamon. Cook mixture over low heat, stirring frequently. Combine sugar and cornstarch, stir into tomato mixture. Cook until clear, stirring constantly. Add butter, remove from heat and let stand until slightly cooled. Pour into unbaked crust, cover with second crust, seal and crimp the edges, cut several small slits in top crust. Bake at 435º for 35-45 minutes or until nicely browned.
Green Tomato Bread
3 cups flour 1/4 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 2 cups sugar 1 tblsp. cinnamon 2 large eggs, lightly beaten 1 cup vegetable oil 1 tsp. vanilla 2 cups chopped green tomatoes 1-1/2 cups chopped pecans
Preheat oven to 350º
Grease and flour two 8x4 loaf pans. Combine first six ingredients, make a well in the center of mixture. Combine eggs, oil and vanilla, stir well and add to the dry ingredients, stirring until just moistened. Fold in tomatoes and pecans. Spoon batter into prepared loaf pans. Bake for one hour or until a wooden pick inserted in center of bread comes out clean. Cool in pans for 10 minutes and then remove and let cool completely.
Green Tomato Cake
2-1/4 cups sugar 1 cup melted shortening 3 eggs 2 tsp. vanilla 3 cups flour 1 tsp. salt 1 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. nutmeg 1 cup walnuts 1 cup raisins 2-1/2 cups diced green tomatoes
Preheat oven to 350º. Cream sugar, shortening, eggs and vanilla until smooth. Sift flour, salt, baking powder, cinnamon and nutmeg into egg mixture. Blend together, stir in nuts, raisins and tomatoes. Pour into greased 9x13 pan. Bake for one hour.

TOMATILLO SALSA (green tomato salsa)
Boil 10 green tomatoes and about 2-4 jalapeno peppers (depending on how big of a spicy kick you want) after about 15 minutes drain all water and pour into blended with 3 cloves. Of garlic and half a bunch of cilantro and blend together well. After. You pour into a bowl add salt to taste and the secret is to add ground cumin (cominos) about 2 teaspoons blend together. Goes great with grilled chicken.

To Can Green Tomatoes for Frying or Pies Wash and slice into quart jars. Fill with water and partly seal and cook for 1 hour in boiling water bath. In winter, when using for fried, pour off water, salt and pepper - dredge in flour and fry in hot oil until browned. For pie - drain. Use 2 tablespoons of the juice per pie plus 2 heaping teaspoons cornstarch, 1 cup sugar, 1/2 tap allspice (or 1/4 teaspoon nutmeg and 1/2 teaspoon cinnamon), 1 tablespoon vinegar, sliced green tomatoes, 1 teaspoon butter. Put in crust and cover with top crust - bake at 400 degrees until juice is heavy syrup.

Green tomatoes 1/3 teaspoon allspice 2 tablespoons vinegar 1 cup sugar 1 tablespoon flour 1-9inch pie plate with double crusts
Slice very thin, enough partly peeled tomatoes to fill bottom crust of pie. Mix together sugar, allspice, and flour and pour over tomatoes. Distribute vinegar over pie. Put top crust on and bake at 450 degrees for 15 minutes, then reduce heat to 350 degrees and bake about 1 hour.
