Pretty sure there isn't an easy dessert around unless you're just planning to slice a watermelon. This is quick to throw together, just store it in the fridge until dessert time. It's low guilt too!
Ingredients
1 box sugar-free cheesecake Jello pudding mix, prepared 1 container of low fat, low sugar Cool Whip 1 can no sugar/reduced sugar cherry pie filling 1/2 sleeve of unsalted saltine crackers
Instructions
Mix up cheesecake jello pudding according to the instructions in bowl.
Crush a healthy handful of unsalted saltines and spread them on the bottom of a glass pie plate.
Layer 1/2 the cheesecake pudding on top.
Then add 1/2 the can of cherry pie filling, followed by half the container of Cool Whip.
Add another layer of crushed saltines, followed by the remaining pudding, then the remaining Cool Whip and then the remaining pie filling.
Chill in the fridge, when you serve it, it will be more like pudding than pie. If you would like a pie that you can slice into wedges, put the pie in the freezer until almost frozen.
Store remaining dessert in the fridge after serving.
