5 cups broccoli florets, cooked and cooled 1 pint cherry tomatoes, halved 2 tbsp chopped scallions 1/4 cup fat free mayonnaise 1/2 cup low fat sour cream 1 tbsp lemon juice 1/2 tsp salt 1/4 tsp pepper
Mix the broccoli, tomatoes and scallions together.
In another small bowl mix the remaining ingredients. Pour over the vegetables and mix gently.
Cover and chill for at least an hour.
Change it up
- add a little sugar to the dressing - add raisins, or chopped strawberries - add some nuts for a crunch - use uncooked broccoli - use ranch or creamy Italian dressing instead of mayo - add feta cheese crumbles
