Lemon is an all time favorite dessert flavor in our house. These luscious bars are easy to make, and have been a much requested recipe for decades!

Ingredients

Crust:

1 cup flour
1/4 cup confectioners sugar
1/2 cup butter or margarine

Top Layer:

2 eggs
3 tbsp lemon juice
3/4 cup sugar
2 tbsp flour
1/2 tsp baking powder

Instructions

Preheat your oven to 350F.

Mix together the crust ingredients, cutting in butter until mixture crumbles. Press into the bottom of a prepared 8x8 inch baking pan. Bake in oven for 10-12 minutes.

In a large bowl beat eggs with mixer until they are a light yellow lemony color. Add in sugar and lemon juice and beat for about 5 minutes.

Sift together flour and baking powder. Add to the lemon mixture and blend well.

Pour the lemon mixture over the cooked bottom crust and bake for an additional 20 minutes.

Allow to cool before cutting into squares. Dust with sifted confectioner's sugar if desired.
