Homemade salad dressing is SO easy to make and there's nothing fresher. It makes all the difference on a salad. Here's an easy to pull together recipe for Catalina Dressing, one of my personal favorites!
Ingredients
1/4 cup onion, chopped fine 1/4 cup ketchup 1/4 cup sugar 1/4 cup red wine vinegar 1/2 tsp paprika 1/4 tsp Worcestershire sauce 1/2 cup light oil (canola, sunflower) salt and pepper to taste
Directions:
In a small hand chopper/mixer, finely chop onions.
Add ketchup, sugar, vinegar, paprika and Worcestershire sauce and blend well.
Slowly the oil while blending until it comes together (emulsifies). Taste, and then season as desired with salt and pepper.
Store in fridge in an airtight container, and shake before using.
Because this is fresh, it will last about a week, so if you find yourself with leftovers, it makes a great baste for grilled chicken.
