When we aren't growing our own, I like to buy fresh herbs whenever possible to use in cooking. However, often times, if not stored properly, they can end up being tossed out. I find keeping them fresh in jars is a great way to keep them for up to 2 weeks.
Simply trim the ends and put them in mason jars, filled with clean water.
Cilantro is best stored this way in the fridge, covered with a clear plastic baggie over the top. Basil and parsley do not need to be refrigerated, in fact you definitely don't want to do that with the basil as it dislikes cool temperatures.
Be sure to change the water when it begins to discolor.
