Crock Pot Orange Chicken
4 boneless skinless chicken breasts 8 boneless skinless chicken thighs 2/3 cup all-purpose flour 1/3 cup corn starch ½ tsp salt ½ tsp course ground black pepper ½ tsp paprika 1 tbsp dry mustard 1 ½ tbs minced garlic 1 1/3 cup orange marmalade 1 ½ cup orange juice ½ cup honey ½ cup mustard ½ cup ketchup 4 Tbsp. rice wine vinegar 4 Tbsp. soy sauce 4 Tbsp. brown sugar 1 Tbsp. finely grated fresh ginger 3 scallions, chopped/thinly sliced 2 bags of cut up fresh broccoli crowns, carrot coins and snow peas from the grocery store White rice to steam, can use regular in a steamer or the 5 minute kind.
Spray crockpot with cooking spray.
Cut up chicken into bite sized pieces.
In a bowl mix the flour and corn starch together drop in the chicken and toss to coat well.
Place chicken pieces in the bottom of the crock pot. In separate bowl, mix together remaining ingredients well (I include the leftover flour and cornstarch in this mixture to help thicken it up while cooking ) with a wisk and pour over chicken.
Cook on LOW 6-7 hours or HIGH 4-5 hours.
Steam the two bags of Broccoli/carrots/snow peas for five mins so that they are still nice and crisp.
Cook or steam rice as necessary.
Serve rice topped with Broccoli mix then chicken, enjoy!!!!
