Lemon Winter Pudding

Prep Time: 10 minutes
Cook Time: 55 minutes
Yield: 16 servings

Ingredients

1 yellow cake mix
2 pkg instant lemon pudding mix
2 cups milk
1 1/4 cup water
confectioners sugar to dust on top

Instructions

Mix cake mix as instructed on box. Pour into prepared 9x13 pan.

In a large bowl pour milk and water. Add lemon pudding mix. Beat with a whisk for 2 minutes and then pour over top of uncooked cake batter. Do NOT mix the lemon pudding and cake mix together!

Bake at 350F for 55 minutes. Sauce/Pudding will go to the bottom and cake will be on top.

** Place your pan on a cookie sheet to catch potential spills of the lemon pudding as it bubbles and bakes.

Dust with confectioners sugar after you take it out of the oven. Good warm or cold, but on a chilly night nothing beats a warm bowl of this dessert.

I haven't tried it but I bet a chocolate pudding with chocolate cake mix would be awesome too served with whipped cream.
