1 lemon 1 cup sugar 1 Tblsp baking powder 1 1/2 cups flour 1/2 tsp salt 2 eggs 1/2 cup milk 1/2 cup soft butter
Grate lemon
Grease and flour loaf pan
Mix flour, baking powder & salt together in a small bowl and put aside.
In a larger bowl beat together sugar and butter. Add dry ingredients and mix well. Add 2 eggs and beat well. Add milk and mix with spoon, then beat. Add lemon rind and mix well.
Pour into loaf pan and bake at 350 degrees for 1 hour.
Cool 10 minutes and remove from pan.
When cake is cooled place 1/4 of sugar and juice of the lemon in a small pot and cook while stirring for 2 minutes to make a glaze.
