Driftwood, Texas' Salt Lick BBQ is world famous. I can't think of a better BBQ place, in a better location, anywhere. If you are ever in the area, it's well worth finding, but remember - go with an empty stomach, because you're going to fill it up with some the best BBQ you've ever tasted. If you ask, they'll allow you into the kitchen area, to photograph the pit. Mr Mom always lives for that moment.
Here is their amazing and yet simple German Potato Salad, that is served warm with every meal. If you're in Texas you can find the Salt Lick BBQ sauce at your local supermarket, and if you can't or you're out of state visit www.saltlickbbq.com and order it online.
Here's the Salt Lick's easy recipe for their German Potato Salad. I just made a batch and its a good as I remember!
Please note - if you are looking for a more complicated, traditional German Potato Salad you might want to use a search engine. This recipe is simply presented and shared for those who have made good memories of dining at the Salt Lick (like me) and are looking to re-create the experience. Out of respect, the title of the recipe remains as they've set it.
Ingredients
3 lbs potatoes, skin on 1/4 tsp salt 1/4 tsp pepper 1 tbsp toasted sesame seeds 3 tbsps pickled onion 1/2 cup Salt Lick BBQ Sauce
Directions:
Wash potatoes.
Boil them whole in a large pot, with the skin on, for about 30-45 minutes until they are fork tender.
Remove from the water, and take off the potato peel.
While the potatoes are still hot, dice them into 1 inch cubes, and transfer to a large mixing bowl. Add salt, pepper, sesame seeds and chopped pickled onion. Mix thoroughly.
Add BBQ sauce, and mix again.
Serve warm or chilled.
*If you had to use a different BBQ sauce I'd suggest a non-tomato based one.
