Yates Scott's Infamous PIZZA CHEESEBALL
He says: You can double this if you're having company or a party , this is what I make for my house to snack on and its gone in no time makes one small cheeseball .
INGREDIENTS:
2 8oz brick of cream cheese softened 1 can original rotel (or any mild diced tomatoes and green chilies) drained WELL--can used medium or hot if you like it spicier, i use medium for parties but my family likes mild 1/2 C shredded mild cheddar 1/2 C shredded chedddar/monterrey jack 1 1/2 C shredded mozzarella (separated) 3/4 & 3/4 1- 2 tsp pizza seasoning about 20-40 sliced pepperonis DICED up
DIRECTIONS:
Mix all well except 3/4 C Mozzarella - set it aside
Form into a ball - the mixture will still be a little moist from the rotel tomatoes and chilis even after draining well
Roll in the Mozzarella that's been set aside coating well even if you must pat onto the surface
Wrap tightly in cling wrap and chill for 2 - 3 hours before serving. Pizza ball can be stored in air tight container for several days in refrigerator. Serve with Butter flavored crackers.
Chicken Cheese Ball
This recipe is a good one to serve if you have people struggling with Crohn's disease at your party.
Ingredients :
1 8oz brick cream cheese softened 1 small can chunk chicken (drained) 1/4 C chopped dill (could use dill relish) 1/8 - 1/4 C chopped onion chopped pecans
Directions :
Mix well. Form into ball. Can roll in chopped pecans or shredded cheddar if you dont want nuts. Cover with cling wrap and store unused portion in an airtight container in refrigerator for several days.
NOTE: from Scott- I make this alot myself not having Crohn's but i alter it a little for my taste since those individuals must eat so many things that are kind of muted for their digestive tract, I modify it in this manner - I use 2 blocks cream cheese, stick with the chopped dill, add 3/4c chopped sweet pickles, 1/3c diced celery, 1/3c diced onion, tsp paprika, 1/4 tsp cumin two pinches of sea salt, two pinches cracked black pepper, *3-4 small cans of chicken or 2 large cans, drained well and shredded, and roll it in cheddar since im allergic to nuts, and serve on townhouse crackers , it is FANTASTIC!!!!!
