Sausage Cheese Potatoes and Carrots (Grilled in Foil Packets)
4 medium potatoes, chopped into large bite sized pieces 1 - 1 1/2 cups baby carrots 1 yellow pepper, chopped into medium sized pieces 1 small onion, chopped 1/2 lb ground sausage, crumbled, cooked and drained salt and pepper to taste 1/2 cup shredded cheddar cheese (or more if desired) 4 tbsp butter garlic powder parsley
In a bowl mix together potato, carrots, pepper and onion.
Add in sausage and toss gently together.
Divide vegetables into 4 servings, and place in the center of double layered square sheets of foil.
Sprinkle each vegetable serving with cheese, salt and pepper to taste, and a dash of garlic powder and parsley. Top with 1 tbsp of butter (does not have to be melted).
Fold the vegetables up in the foil, with first layer folded and sealed across the packet, and the second layer folded and sealed in the other direction. This helps minimize leaks.
Add to hot coals or grill and cook for about 20-30 minutes, turning often.
