This pasta salad is full of Asian flavor, with a touch of a nice array of textures and colors that would be a welcome addition to any summer evening meal, or a quick, lunch on the go.
Ingredients
1 (12 oz dry) box of pasta, cooked and cooled 1/3 cup peanuts 1/3 cup craisins 1 can mandarin oranges, drained 1 can water chestnuts a small handful of peanuts (I used honey roasted)
Vinaigrette
1/2 cup oil 1/4 cup teriyaki sauce 3 tbsp rice wine vinegar 3 tbsp cider vinegar 3 tbsp sugar 1/4 tsp salt 1/4 tsp pepper
Instructions
Cook pasta, drain, rinse and set aside in a large bowl.
Mix vinaigrette ingredients together in a small bowl until well blended. Pour over pasta. Add the rest of the ingredients and toss gently until everything is well coated.
