Ingredients
1 4 oz box cook and serve lemon pudding 3/4 cup sugar 4 egg yolks 1/2 cup water 2 1/2 cups water 1 deep dish pie shell (baked)
Meringue:
4 egg whites 3/4 cup sugar
Directions:
In a saucepan, combine lemon pudding and sugar. Mix egg yolks with 1/2 cup water and stir. Add egg yolk mixture into the pudding mixture and stir in another 2 1/2 cups water.
Cook until thick. Allow to cool about 5 minutes and then pour into baked pie shell.
Beat the egg whites until really frothy. and then gradually add the 3/4 c sugar, continuing to beat until you have good stiff peak.
Spread meringue on top of the pie, making sure you seal to the crust edges. Bake in 350 oven for about 10 minutes until peaks are golden brown.
