Mom's Pantry friend, Sharon Jackson, sent me a link the other day on how to make pie crust from a cake mix. The possibilities seemed endless as far as combinations go, and I decided to try a red velvet version to go with a chocolate mousse filling.
Ingredients
1 regular box of cake mix, any flavor (I used Duncan Hines Red Velvet 1 whole egg 3 egg yolks 1 tbsp butter
Directions:
Combine all ingredients together to make a workable dough. Each recipe will make 2 single crusts.
Split dough ball in half, and roll out as you would any pie dough, making sure to make it even and level. You will need to flour the board to do this.
Important: prepare your pie pan first so that the dough doesn't stick, with a baking spray or other method.
This dough must be pre-baked. Poke holes in the bottom of the pie shell before baking to prevent bubbling. Bake at 350 for 25 minutes. Allow to cool before filling.
