Ingredients 1/2 cup butter 2 small boxes cook and serve vanilla pudding 1/2 cup milk 1 tsp vanilla 1 lb (or so) confectioner's sugar 1/2 cup peanut butter 1 bag chocolate chips 1 bag butterscotch chips
Instructions
Melt butter in large saucepan. Add in pudding powder. Stir to blend.
Add milk, and cook over medium heat for two minutes, stirring constantly. The mixture will be very thick.
Remove from heat and add in powdered sugar, peanut butter and vanilla. You may need to add more powdered sugar to bring the mixture to a consistency that will mold into an egg shape.
Shape using a tablespoon and refrigerate while you melt the chocolate and butterscotch chips in a double boiler.
Coat eggs one at a time and place on a cookie rack to set. Makes approximately 20 eggs.
