3-4 large russet potatoes 1/2 cup sour cream 1/4 cup mayonnaise 1/2 lb bacon, cooked and crumbled 1/2 small onion, chopped chives (optional) 3/4 cup of cheddar cheese salt and pepper to taste
Wash potatoes. Cook until fork tender. Drain and allow to cool.
When cooled, chop potatoes into bite sized pieces. Set aside.
In a small bowl mix together the sour cream and mayonnaise. Season with salt and pepper. Toss the potatoes with the mayo mixture.
Add 1/2 cup shredded cheese, the chopped bacon (reserving a little for the top), chives, and chopped onion to the potato mixture. Toss gently, until everything is incorporated. Season additional if desired.
Garnish with remaining shredded cheese and bacon crumbles.
