Streusel Topping
1/4 cup brown sugar 3 tbsp flour 2 tbsp cold butter 1/3 cup chopped nuts (walnuts or pecans)
Bread
2 cup flour 1 ½ tsp baking powder ¼ tsp cinnamon quick dash nutmeg ½ tsp baking soda 2 eggs, beaten 4 ripe bananas, mashed 1 cup sugar ½ cup melted butter
Streusel:
Combine flour and brown sugar in a small bowl. Cut in cold butter, until mixture is crumbled. Add in finely chopped nuts, stir and set aside.
Bread:
Combine dry ingredients in mixer.
In a medium bowl mash bananas. Add in beaten eggs, sugar, and melted butter. Add this egg mixture to the flour mixture and stir until moistened. Do not over mix. Fold in 1/2 chopped nuts if desired.
Pour batter into pan(s).
Sprinkle top with streusel topping. Bake at 350° for 40-50 minutes or until toothpick comes out clean.
Temperature: 350F
2 smaller loaves for 45 minutes (or until center is cooked) 1 large loaf for 60-70 minutes (or until center is cooked)
