6 large potatoes, peeled and diced 1 1/4 cup milk 1 pkg dry ranch dressing (or make your own) 1 1/2 cup shredded cheese 1/2 tsp salt 1/2 tsp pepper 1 can condensed cream of chicken soup 6 pieces of bacon, cooked and crumbled
Cook diced potatoes until almost tender -- about 10 minutes. Strain and spread them on the bottom of the a prepared 9x13 baking pan.
In a bowl mix together: cream of chicken soup (undiluted), dry ranch dressing, 1 cup shredded cheese, milk, salt and pepper. Mix well and pour over the potatoes.
Sprinkle bacon and cheese on top and bake at 350F for 30 minutes.
