Yield: serves: 6-8
1 unbaked 9-inch pie shell 2 tbsp. milk 4 cups sliced Roma tomatoes (not REAL ripe) 5-6 slice bacon, cooked and crumbled 1/4 teaspoons salt 1/8 teaspoon pepper 1/2 cup grated Parmesan cheese 1 cup mayonnaise 2 heaping tbsp crushed garlic
Preheat the oven at 450 degrees.
Line pie pan with pastry rolled 1/8-inch thick, crimp edges, and brush shell with evaporated milk. Bake in preheated 450` oven for 5 minutes. Fill shell with tomatoes ,bacon, and sprinkle with the salt and pepper.
Mix remaining ingredients, and spread on tomatoes. Bake in a preheated 350 degrees oven for 40 minutes, or until tomatoes are done & mayo/cheese topping is golden brown.
