Jacqueline says: Here is another oh so easy cookie treat. I saw this on an old Phil Donahue show in the early 1980's. It is a "knock off" of the thin mint Girl Scout cookie.
Ingredients
Box of Ritz crackers. (I use the reduced fat ones), Peppermint oil, Ghiradelli chocolate melting wafers (or other melting/ dipping chocolate)
Melt the chocolate (in a bowl)
Add a few drops of the peppermint oil and stir (number of drops depends on personal preference and I would recommend you dip and taste to see if it is as pepperminty as you want it to be).
Drop crackers in chocolate and coat well. Place on waxed paper to set. Refrigerate.
*Note- I place wax paper on cookie sheets and when they are full, I place I the fridge to set. Once set, I transfer to a container.
