The premise behind the Green Tomato BLT is a simple one -- make your favorite BLT (lettuce, bacon and mayo on toasted bread) along with the substitution of breaded and fried green tomatoes in place of regular ones.
*I love to use a multi=grain bread for texture and additional flavor but you can use any bread you prefer.
Here's how I make my fried green tomatoes:
Slice larger sized green tomatoes to about 1/2 inch thick. Choose firm ones so they don't fall apart in the pan)
Sprinkle with a little bit of salt, and allow them to sit for a few minutes.
You will need to dip the tomato slices into three bowls.
1. Flour mixed with seasoning salt (I use Uncle Bob's spicy version) (about 1 cup of flour to 1 tbsp seasoning)
2. 1/2 cup of milk combined with 1 beaten egg
3. 1/3 cup cornmeal and 1/2 cup panko (or bread) crumbs
Once the slices are dipped, place in a pan of hot peanut oil (or other light oil). Brown on each side for about 3-4 minutes, until golden brown. Place on a paper towel to drain.
