1 tsp. minced ginger root 1 stalk celery, sliced 1 clove garlic, minced 1 cup small broccoli florets 1 small carrot, cut into thin slices 1 small green pepper, cut into strips 1 cup snow peas
*you can add any vegetables you would like -- bean sprouts, celery, water chestnuts -- stir-frys are quick and easy meals that can be tailored to your family's personal tastes.
Instructions
Marinate beef with 2 tbsp Catalina dressing and 1 tbsp soy sauce for a couple of hours.
In wok or large skillet, cook beef quickly with a small amount of light oil (1 tbsp should do at the most). Add in minced garlic and ginger root. Add in vegetables and continue to cook.
*If your vegetables are cut thin, this should be a very quick process. Sometimes I add a couple of tbsp of water (to help create steam) cover, and let it sit for a couple of minutes.
Add in 1/2 cup Catalina dressing, soy sauce and continue to heat for a minute or so, tossing gently and continuously.
