Ingredients
2 chicken breasts, cut into 1 inch cubes 1/2 cup sliced carrots 1/2 cup sliced peppers 1/2 cup Chinese pea pods 1/2 cup chopped onions sweet and sour sauce (see below) small amount of light oil for pan
*you can add any vegetables you would like -- bean sprouts, celery, water chestnuts -- this is a great meal that can be tailored to your family's personal tastes.
Sauce:
3 tbsp sugar ¼ cup vinegar 1 ½ tbsp Worcestershire sauce ½ cup ketchup
Instructions
In wok or large skillet, cook chicken quickly with a small amount of light oil (1 tbsp should do at the most). Add in vegetables and continue to cook.
*If your vegetables are cut thin, this should be a very quick process. Sometimes I add a couple of tbsp of water (to help create steam) cover, and let it sit for a couple of minutes.
Add in sweet and sour sauce (made by combining the ingredients in a small bowl) and continue to heat for a minute or so, tossing gently and continuously.
Serve over rice or alongside noodles.
We also use this same method for beef and pork stir-frys. Quick and healthy and much less money than take-out.
