Ingredients:
3 cups flour 1 tsp salt 1 tsp baking soda 1 tsp baking powder 3 tsp cinnamon 3 eggs 1 cup canola oil 2 1/4 cups sugar 3 tsp vanilla 2 cups shredded zucchini 1/2 cup chopped walnuts
Sift together flour, salt, baking powder and soda and cinnamon.
Beat eggs and add in oil. Add in sugar and mix well.
Add in vanilla.
Add dry ingredients. Mix well.
Fold in zucchini and walnuts.
Pour into a prepared bundt pan.
Bake at 325F for approx 60 minutes, or until an inserted toothpick comes out clean.
