Zucchini Sweet Pickle Relish

Sweet Pickle Relish made with zucchini or cucumbers
Four cups chopped zucchini or cucumber
2 cups chopped onions
1 chopped green pepper
1 chopped sweet red pepper
¼ cup salt
3½ cups sugar
2 cups cider vinegar
1 tbls. Celery salt
1 tbls. Mustard seed
Combine zucchini, onions, green & red peppers in a large bowl; sprinkle with salt and cover with cold water.
Let stand 2 hours.
Drain thoroughly; press out excess liquid.
Combine sugar, vinegar and spices; heat to boiling.
Add drained veggies and simmer 10 minutes.
Pack hot into hot ½ pint jars, leaving ¼” head space, adjust caps.
Process 10 minutes in boiling water bath. Yield: about 8 ½ pints.
