Zucchini Skillet

2 Tbsp butter or margarine 1/2 tsp chopped onion 1 tsp basil 1 1/2 c V8 juice 2 tsp lemon juice 4 c zucchini, peeled and chopped 11/2 c corn (I use frozen ) 1/2 c chopped green pepper In a skillet melt butter or margarine, sauté onion, basil, green peppers, add remaining ingredients and simmer till tender. Becky says: I have doubled and tripled this. It is always a hit. |
