Try cooking it in foil or on the grill
Layer the following in a 9x9 casserole dish
2 med zucchinis, sliced a sprinkle seasoning salt 1 small onion sliced 2 tomatoes sliced 1-2 sweet peppers sliced sliced smoked sausage (I used skinless angus beef sausage) 1/2 - 3/4 of shredded cheddar cheese
