Zucchini Patties

4 cups shredded zucchini 1/2 tsp. salt Let stand 15 minutes and squeeze out moisture. Stir in: 2 eggs 6 Tblsp. parmesan cheese 1/2 clove garlic - finely minced Mound 2 Tblsp. mixture in pan and flatten to make patty- Cook in hot oil or butter-cook 6-8 minutes turning once. |
