Zucchini Muffins

3 eggs 1 cup oil 2 cups brown sugar 2 cups shredded zucchini 2 1/2 cups flour 1/2 tsp. salt 1 tsp. baking soda 1 Tblsp. vanilla 1 cup chopped nuts Bake at 350º for 20 minutes in a greased muffin pan. |
