Zucchini Marmalade

6 cups Zucchini shredded 1 20oz. can Pineapple 6 cups sugar 1/4 cup Lemon Juice 2 pkgs. Apricot or Peach Jell-o Cook the zucchini for six minutes.Do not add any water, stirring constantly. Mix all ingredients together, except for jell-o and cook for two minutes. Remove from stove and add jell-o Keep in the refrigerator Makes 5 pints |
