Zucchini Crust Pizza

4 cups grates zucchini 2 cups grated mozzarella cheese, divided 2 eggs, slightly beaten 1 tsp. olive oil 1 clove garlic minced 1 medium onion, chopped 1 (14 0z) Pizza sauce ½ cup green pepper 1/3 cup Parmesan cheese Chopped ham (optional) Drain and squeeze moisture from zucchini (this is important)Mix with 1 cup grated mozzarella cheese and eggs.Press into a pizza pan sprayed with Pam or Olive oil.Bake at 400º for 10 minutes. Toppings Saute onion garlic and remaining ingredients…add whatever you want…like a pizza. Stir in pizza sauce, spoon mixture over zucchini crust. Top with Parmesan and put back into oven and bake at 400º for 30 minutes.Put the mozzarella cheese on the last 15 minutes. |
