Zucchini Cookies

3/4 c marg. 2 c sugar 3 eggs 2 tsp.vanilla 4 c flour 1 tsp. salt 2 Tblsp. baking powder 1 1/4 baking soda 1 tsp. cinnamon 1/4 tsp. ground gloves 1/2 tsp. ginger 1/2 tsp. all spice 3 c zucchinni 2 c raisins 1 c chopped nuts-optional Blend marg. and sugar, the add eggs ,vanilla, beat well. Gradually blend all dry ingredients in. Stir in zucchini, then fold in raisins and nuts. Bake at 350º 10-12 minutes on ungreased pan. |
