Zucchini Cinnabon Loaf
1/4 c. butter, softened 3/4 c. sugar 2 tsp. vanilla 2 eggs 3/4 c. plain greek yogurt 1 c. shredded zucchini (I don't peel mine) 1 3/4 c. flour 1 tsp. baking powder 1/4 tsp. baking soda 1/4 tsp. salt
Cinnabon Swirl:
2 1/2 tbsp. sugar 2 1/2 tbsp brown sugar 2 tsp. cinnamon 1 tbsp. water
Glaze:
1/2 c powdered sugar 1 tsp vanilla 1-2 tsp milk
Instructions:
Preheat oven to 350F and prepare 9x5 loaf pan with baking spray.
In a large bowl combine sugar and butter until creamy. Add in vanilla. Add in eggs.
Add in the yogurt, followed by the shredded zucchini -- beat well after each addition.
In another bowl, combine the dry ingredients. Add to the wet ingredients and mix until just combined.
Combine the swirl ingredients in a separate bowl.
Spread 1/2 the batter in the loaf pan. Top with the swirl mixture. Top with the remaining loaf batter.
Bake at 350 for approximately 50 minutes.
Allow to cool slightly before removing from the pan. When cooled completely, mix the glaze ingredients and drizzle over the top.
