Zucchini "Crab" Cakes

3 eggs – beat until foamy 1 C oil2 C sugar 1 tsp. vanilla 2 C grated zucchini add all to eggs and mix well 3 C flour 1 tsp. soda 1 tsp. baking soda 1 ½ C raisins 3 tsp. cinnamon Mix all together, then add to above mixture and mix well. Pour into two greased and floured 9” loaf pans. Bake at 350º for 50-60 minutes. |
