Zucchini Apple Bread

4 cups flour 3 tsp baking soda 1-1/2 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp salt 1-1/2 cups applesauce, unsweetened 1 cup sugar 1 cup brown sugar 1 tsp vanilla 2 cups shredded zucchini 1 cup grated, peeled apples 1/2 cup chopped pecans 2 eggs 3/4 cup oil In a large bowl combine flour, baking soda, cinnamon, nutmeg, and salt. In a large mixing bowl beat eggs until frothy. Add oil, applesauce, sugars, and vanilla; beat until blended. Stir into dry ingredients just until moistened. Fold in zucchini, apples, and pecans.Spray three (8x4x2-inch) loaf pans and put in the batter. Bake at 350°F for 55-60 minutes. Cool for 10 minutes before removing from pans to wire racks. |
