2 boneless chicken breasts, cut into cubes 1 orange pepper, diced 1 yellow onion, diced 1 (15 oz) can white kidney beans, rinsed 1 (15 or 16 oz) can hominy (white corn) , drained 1 pkg white chicken seasoning mix* (such as Carroll Shelby or McCormick's or see recipe below for homemade version) 3 cups liquid (water and/or chicken broth) 1 small can chopped green chiles (optional) 3 tbsp cream cheese or 1 cup sour cream (optional)
* Seasoning Mix
1 teaspoon freshly ground pepper 1 teaspoon oregano 1 teaspoon ground cumin 1 teaspoon seasoning salt 1 teaspoon cayenne pepper (optional or to taste) 1 chicken bouillon cube, crushed
Brown chicken pieces in skillet. Set aside.
Cook pepper and onion pieces until onion is translucent. Add in chicken, once again.
Add seasoning mix and water. Mix well.
Add in beans and hominy (and green chiles if desired). Simmer for 30 minutes.
Add cream cheese or sour cream, if desired, stirring until blended, about 5 minutes before serving.
