Waldorf Chicken Salad
This recipe is wonderful for lunch or a light supper. I serve mine on wonderful buttery croissants, but it would also be great on a bed of fresh lettuce.
1 medium apple, chopped with peel on (I like Granny Smith for this recipe but feel free to use your favorite) 2 tbsp lemon juice 2 cups chopped cooked white chicken 1 cup seedless grapes (red or green), halved 1 stalk celery, chopped 1/4 cup raisins 1/2 cup pecan halves
Toss chopped apple pieces in lemon juice to prevent browning.
Add in remaining ingredients and toss gently.
Mix together the following dressing ingredients:
3/4 cup Greek yogurt 1/4 cup mayonnaise 1/4 cup fresh orange juice dash of salt
Pour dressing over the chicken salad mixture and toss until everything is evenly coated.
Refrigerate until ready to serve.
Serve on croissants or other bread of your choice, or on a bed of greens.
